Matcha Brownie Cookie Bars

matcha brownie cookie bars / gooey matcha brownie meets cookie with the most perfectly golden brown edges. Earthy and sweet matcha brownie combined with chocolatey cookie makes the most perfectly balanced flavor and texture dessert combo. This dessert is sure to impress!

Ingredients:

Ingredients for the matcha brownie batter: 
– 6 tbsp unsalted butter
– 1/4 cup + 2 tbsp brown sugar 
– 1/4 cup white sugar 
– 1 egg 
– 1/4 tsp vanilla extract 
– 3/8 tsp salt 
– 1 tbsp culinary grade matcha powder (sifted) *For this recipe I used Naoki organic culinary grade matcha
– 1/2 cup + 2 tbsp all purpose flour 
– 1/4 cup white chocolate chips

Ingredients for the cookie dough: 
– 6 tbsp unsalted butter
– 1/2 cup brown sugar
– 1/4 cup white sugar
– 1/4 tsp vanilla extract 
– 1 egg
– 1/4 tsp baking soda
– 1/4 tsp salt
– 1 cup + 1 tbsp all purpose flour
– 1/2 cup dark chocolate chips


Instructions:

-Preheat your oven to 350 degrees Fahrenheit. Prepare a loaf pan (8×4″ or 9×5″ pan works) with parchment paper, grease, and set to the side 
Make the matcha batter:
-Combine melted butter, brown sugar, and white sugar. Whisk until well combined. Then whisk in vanilla and 1 egg
-In a separate bowl, add flour, sifted matcha powder, and salt. Whisk dry ingredients together 
-Add the dry ingredients to the wet ingredients, fold to combine. Add the white chocolate chips and fold in until incorporated. Do not overmix. Set to the side.

Make the cookie dough:
-Next make the cookie dough in a separate bowl: mix together melted butter, brown sugar, and white sugar. Add in vanilla extract and 1 egg, whisk to combine
-In the same bowl, add baking soda, salt, and flour. Fold until combined and no dry parts remaining. Fold in the chocolate chips until incorporated. 

-Add the matcha and cookie dough batters to loaf pan. You can use a cookie scoop to alternative between the matcha and cookie batters. Once all the batter is in the pan, you may need to push and spread the batter down a little to ensure the top of the batter is evenly spread out  
-Bake for 28-30 minutes until cooked through with golden brown cookie edges and matcha brownie is cooked through (toothpick should come out clean) 
-Allow to cool and then serve and enjoy! :)
